T&G Rum Spritzer

1 ½ oz Rougaroux® Sugarshine
2 oz Soda water
1 teaspoon simple syrup
6 medium to large tarragon leaves
1-1/4 in square cube of fresh ginger
Muddle ginger and tarragon (keeping two for garnish) with simple syrup. Add Sugarshine and fill with ice, then add soda water. Garnish with lemon and tarragon leaves.
