Slice rind and peel if desired (I like leaving it on). Place in container. Boil 1/4 cup Rougaroux Sugarshine Rum, 1/4 cup Apple cider vinegar, 1/4 cup El Guapo Bitters Ginger syrup, and 1 tbsp kosher salt. Pour over the rinds. Seal and wait at least several hours to serve for flavors to penetrate rind.

*Use caution when cooking with alcoholic beverages to prevent fires. If you are not comfortable with the required technique add the booze after you remove the lot from heat.
